Awesome dish that my friend Kortner Olson showed us how to prepare in her cooking class I attended while visiting Costa Rica. They are delicious....I "might" be guilty of sneaking more than my share that day to eat.

- 1 cup cashews
- 1 cup desiccated coconut
- zest of one large lemon (or double the lemon if you want it more tart)
- ½ tsp vanilla extract
- pinch of salt
- 2 tbsp of agave
- Place the ingredients into your processor and pulse at high speed unitl the mixture is smooth and the nuts and coconut have broken down. Roll the lemon batter into small balls and roll in coconut. Place in fridge for 30 minutes and enjoy.
